A Lemonberry trifle is a delightful dessert that combines layers of zesty lemon flavor with the sweetness of berries, all layered with light and airy textures for a perfect summer treat. Typically served in a clear glass dish to showcase its beautiful layers, a Lemonberry trifle begins with a base of a sponge cake soaked in lemon pudding which adds a tangy kick.
Ingredients

Angel Food Cake Mix (*Duncan Hines)

3 tsp vanilla extract

1 ¼ cup water

3.4 oz Lemon Jell-O Instant Pudding

2 cup milk

2 tbsp lemon juice
-
5 tbsp lemon zest
-
8 oz whipped topping
-
1 lb strawberries
-
1 lb blueberries
-
1 whole lemon
-
1 mint leaf
Directions
Preheat oven to 350.
Combine cake mix, vanilla extract and water in medium bowl, then transfer into non-stick cake pan. Bake for 30-35 mins. Cool for 10-15 mins.
Pour pudding mix into medium bowl and add milk, 1 cup at a time, whisking constantly until set. Place in refrigerator until cake is cooled and ready for dishing.
Break up cooled cake in trifle bowl dish and layer pudding in this order: cake, pudding, fruit, whipped topping. Spread contents out to make enough layers for this dish. Do this until filled to the rim.
Lastly, add fruits, slice on lemon and mint leaf on top for garnish.
Serve and enjoy!
