Wildberry Hushpuppies are a delightful twist on the classic Southern favorite. Ingredients

2 cups Krusteaz Blueberry Pancake Mix (or reg. pancake mix with cooked down, fresh blueberries)

½ cup powdered sugar

1 cup milk

¼ cup white chocolate chips

4 cups vegetable oil (to fry)

3 tbsp cream cheese

3 tbsp softened butter, unsalted

2 cups powdered sugar

Pinch of salt

¼ tsp vanilla extract or paste

¼ tsp lemon juice (*optional)

Directions

Preheat frying oil to 350.
In a medium bowl, add blueberry pancake mix, powdered sugar and milk. Whisk together until combined well.
Fold in white chocolate chips.
With a 1/8 ice cream scoop, scoop out batter and drop into heated oil. Cook until golden-medium brown. Drain hushpuppies on papertowel to remove excess grease.
Serve by itself, with cream cheese icing or sauce of choice. Enjoy!

For the cheese cake dipping sauce, add all ingredients in one medium bowl and beat with hand mixer until smooth.
